WINES - SPARKLING WINES
In full Portuguese limestone massif in the Lands of Sicó, in the sunny terraces of red and gray clay, full-bodied and extremely aromatic wines are produced, in a predominantly East / South sun exposure. Due to the geographical proximity of Bairrada, this region adopted the Baga variety as queen of red grapes. Our ancestors selected a variety that is identical to the original French Castelão. After making a test field in 2004, a substantial part of the farm was replanted, introducing red grape varieties such as Touriga Nacional, Tinta Roriz, Bastardo and Shiraz. The white grape varieties Fernão Pires and Arinto were kept and varieties of Sauvignon Blanc, Chardonnay and Moscatel de Alexandria were planted. Such wines have already been the target of several awards.
Oils
It is a fruity aroma oil, with unique characteristics, typical of the balanced and harmonious Galega olive, produced at a temperature never exceeding 35 ° C. With light tones of leaf green, combined with a bitter-spicy flavor typical of clay-limestone soils. Olive oil is produced and packaged in our village without using any chemicals.
CHEESES
Our cheeses are produced in Rabaçal, in Soure, the cheese factory being one of the certified producers of Queijo Rabaçal. A cheese made from sheep and goat milk, in the ideal proportion of 75% of the first and 25% of the second, raw, curdled with animal rennet, cured for at least three weeks. In 2013, the cheesemaker won the first prize in the Fresh Cheese category (mixture) in the “Queijos de Portugal” contest organized by the National Association of Dairy Industry, competing among the 18 cheese categories open to tender. Our cheese are DOP Rabaçal.
SPICES
Taking advantage of the potential of the soils, we also dedicate ourselves to aromatic herbs, produced and packaged in our village without the use of any chemical product.
